Tomato, Mascarpone & Chicken Pasta Bake

This is easy peasy and a proper family favourite – it tastes like restaurant food but is great for the whole crew – it even purées well for baby.

Ingredients

  • Approx 250g dried pasta
  • 1 onion
  • A couple of cloves of garlic
  • Chicken – leftover roast/ a couple of breasts/ whatever you have!
  • As many tomatoes as you have lying around
  • Tin of chopped tomatoes
  • Tin of chopped mushrooms (optional)
  • Tub of Mascarpone cheese
  • Oregano
  • Balsamic vinegar
  • Olive oil
  • Cheddar/ mozzarella/ parmesan

Directions

1Cut tomatoes into segments and put in a roasting dish.
2Pour oil and vinegar over, sprinkle oregano.
3Roast in the oven for half an hour or so.
4Meanwhile, cook pasta and chicken (if not already cooked).
5Cut onion into small pieces, fry in oil for a couple of minutes.
6Add garlic for a further minute.
7Add roasted tomatoes, tinned chopped tomatoes and mushrooms if using. Simmer for a few minutes.
8Add Mascarpone, stir until melted/ mixed in.
9Put cooked chicken and pasta in a large ovenproof dish.
10Pour over sauce and stir through.
11Season with pepper.
12Grate cheddar/ pieces of mozzarella/ parmesan over and grill until melted and bubbly.

Notes

It’s pretty fatty with all the cheese but has no salt, apart from that in the cheese, and the tomatoes give it health points.
