My daughter ate 3 of these and asked for more. Quick and easy to make.
- 1kg of potatoes
- 2 tins of tuna (can be substituted for salmon/white fish/another cooked fish that you prefer)
- 3 shallots, chopped finely
- 1/2 a small can of sweet corn
- Sweet peppers
- 4 tbsp of mayonnaise
- 2 beaten eggs
Seasoning (to taste)
- 1/2 scotch bonnet chopped finely (optional- can be very hot)
- Coarse black pepper
- All purpose spice
1Peel and add potatoes to boiling pan of salted water.
2Boil until tender and drain in colander (leave to air dry and cool for a few minutes).
3Transfer to a large bowl and mash.
4Leave to cool completely before adding the tuna, shallots, sweet corn, peppers and mayonnaise. Mix altogether and season with the above to taste.
5Shape the mixture into 8-12 individual patties.
6If making in advance you can pop in the fridge and fry just before serving, although you can fry immediately.
7Heat a little oil in a frying pan (enough to cover the whole of the base).
8Dip each patty into the egg first and then coat in breadcrumbs.
9Ensure oil is hot and fry each patty for 3-4 minutes or until golden brown flipping half way through cooking.
Serve with a salad of your choice.
