Sally’s Mum’s Sausage Casserole

Lovely comfort food, not refined but yummy.


  • Sausages – any kind – at least 2 per person
  • 1 onion
  • 1 large carrot
  • 1 tin of baked beans
  • 2 oxo cube made up into a pint of stock
  • 2 medium sized thinly sliced raw potatoes


1Fry the sausages.
2Remove them from the frying pan and put them to one side and then fry the sliced onion in the sausage drippings.
3Cut sausages into chunks and put them, and the fried onions, into a large stovetop pan – I use my biggest.
4Add the tin of beans, the pint of stock, sliced carrot, stir well and bring to the boil.
5Once it’s boiling turn it down to simmer and put a lid on. Wait five minutes.
6Then add the potatoes, if the liquid is low, add a bit more stock.
7Once the potatoes are soft, it’s ready to go!


It’s quite orange, as you can see from the pic – but it’s lovey for winter and dead easy.
