This is my partner’s absolute favourite meal. Minimal effort on my part and as it’s a slow cooker recipe – it can be put on in advance and forgotten about. Bliss!! I used to believe you could only cook wet foods in the slow cooker, stews and casseroles etc., but since realising this is not the case – a whole new world of recipes are out there to explore.
8 pork loin steaks
Small box of sage and onion stuffing
Few slices mature cheddar
Salt and pepper
1Place 1 pork stack on a square of tin foil, repeat until you have 4 squares.
2Make up the stuffing mix as per the packet and divide equally between the 4 steaks, gently spreading with the back of a spoon.
3Add a teaspoon of apple sauce to each one, followed by a slice of mature cheddar (or preferred cheese).
4Season well and add another pork loin to create a sandwich.
5Wrap each foil parcel up tightly and cook in the slow cooker on low for around 6 hours. The timings will vary depending on your machine so please keep an eye on it the first time you make it so as not to overcook/dry out.
6Serve with fluffy mash (use an electric whisk, amazing!) lots of veggies and a little splash of gravy.
Have never frozen it but I don’t see any reason why it wouldn’t freeze well.
