After many many years of cheating with boil-in-the-bag or expensive micro pouches I was a little bit proud when I finally cracked rice aged 32 and a bit!
- 1 mug of basmati rice (I use tesco value)
- 2 mugs of boiling water
- Pinch of salt
- (serves 2 adults and 2 kids but can be doubled, tripled, etc.)
1Pour 1 mug of rice into a non stick saucepan (no need to rinse).
2Add 2 mugs of boiling water and a pinch of salt.
3Bring to the boil, then turn down a notch (still at a good bubble).
4Cover and set a timer for 8 minutes, leave it alone, don’t stir it, don’t touch it.
5Turn heat off, fluff with a fork, serve (it will have absorbed all the water) .
6When you life the lid, if it’s still a bit wet put a teatowel over the pan and the lid back on and just leave to stand (not on the heat) to steam a bit more.
You can replace half the water with coconut milk for coconut rice, or add jasmine or star anise. Can also be used as the base for egg fried rice (check out our recipe).
