My 2-year-old and I love this. A great way to serve lots of vegetables.
- 1 large onion
- 3 carrots
- 1 large courgette
- 2 celery sticks
- 0.5 glass couscous
- 2 tablespoons olive oil
- 1 stock cube (veg or chicken)
1Chop onion finely and add to pan with the oil.
2Cook for about 2 mins while it softens, in the meantime grate the vegetables, then add to pan with onion.
3Fry all on gentle heat for about 5 mins until it softens.
4Melt stock cube in glass of hot water and add to veg.
5Simmer everything for about 5-10 mins, depending how soft you like your veg.
6Add couscous and herbs, stir, switch off the heat, cover with lid and wait 5 mins.
7After which stir with fork and serve.
You can add any veg you like, I often add peas or sweetcorn too.
