Giouvetsi (orzo pasta baked with chicken, tomatoes, onions and white wine topped with halloumi cheese)

Giouvetsi or youvetsi is a centuries old Greek dish that was traditionally served as a one-pot meal and in the old days it would have been baked in a home’s wood burning oven. It’s made with orzo pasta and chicken or any other meat you like. So for this reason is super easy to make and super tasty.

Ingredients

  • 1kg of chicken in portions
  • 2 cups of orzo pasta or any other tiny pasta
  • 2 onions
  • 2 tomatoes
  • 1/2 glass of white wine
  • 500 g passata
  • Salt
  • Pepper
  • 4 – 5 bay leaves

Directions

1Heat your oven to a medium heat.
2Sauté your chicken, onions and your 2 chopped tomatoes until golden.
3Add passata and leave to fry until you see it bubbling.
4Add half a glass of white wine and leave the alcohol to evaporate.
5Add your salt and pepper, bay leaves, orzo.
6Add 5 cups of boiling water and then put it in a preheated oven for 45 min – 1 hour.
