Delicious for hungry kids after school. Eat with or without butter.
- 12oz dried fruit
- 4oz demerara sugar
- 7.5 fluid oz tea
- 8oz self raising flour
- 1 egg
- 1 teaspoon mixed spice (optional)
1Soak first 3 ingredients together overnight or for a good few hours.
2Mix the next 2 ingredients in the following day. Add mixed spice if desired.
3Pour mixture into a greased loaf tin.
4Bake in preheated oven (350f/160c/gas mark 4/140c fan) for 1hr15min – 1hr30min until knife comes out clean.
5Leave to cool in tin.
